  • 2 celery stalks, sliced

  • 4 cups (950 ml) vegetable or chicken broth
  • 1 cup (240 ml) dry white wine (optional)
  • 1 tablespoon soy sauce or Worcestershire sauce
  • 1 teaspoon dried thyme or rosemary (or 1 tablespoon fresh)
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon all-purpose flour or cornstarch (optional, for thickening)
  • 1 cup frozen peas (optional, for added color and sweetness)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Vegetables:

    • Heat the olive oil or butter in a large pot or Dutch oven over medium heat.
